LAMB STEW

Lamb is my favorite meat to cook. Whether you are having it as a stew, chops, kebabs or ground meat, you will never go wrong.

Today I will be showing how to make a very easy  lamb stew.

Ingredients

2 pounds of lamb mix pieces (get the ones with bones for flavor)

1 medium onion chopped

3-5 springs onions chopped

3 roma tomatoes chopped

1 tps of tomato paste

2 tbsp of olive oil

Meat seasoning of your choice

Instructions

Season the meat with your favorite seasoning for at least 2 hours or up to 24 hours

Heat the oil in a braiser or pot , once hot braise the meat on medium high for about 5 minutes or until the meat is totally braised, then set aside

In the same braiser/spot, add the onions, spring onions and cook/sauté for about 2 minutes

Add the tomatoes to the onions mixture, cook for about 2 minute  or so until the tomatoes have soften

Make sure to scrap the bottom of the braiser, that makes the best sauce.

Add the tomato paste to the sauce mixture and cook for a min until you get a paste looking texture.

Transfer the braised meat in the pot and add 2-3 cups of water.

Cover the pot and let boil/cook for about 20 min or  until the meat is tender.

I love to add a dry bay leaf for flavor.

Add salt and pepper for taste.

I served my lamb stew with rice and plantains.
