GRILLED LIME SALMON WITH MANGO AVOCADO SALSA

Spring and Summer are my favorite seasons to cook. Why? For the simple reason that I love to incorporate fruits in my cooking and meals. I love to add mangoes, avocados, peaches, pineapple – fresh and zesty colorful flavors.  This grilled lime salmon with mango avocado salsa is a staple in my kitchen. It’s a quick recipe and a lot of fun to make. It’s a great option for lunch, a date night in or a dinner night with the girls. For those who are not a big fan of salmon or fish, you can opt for grilled  chicken which is as tasteful. All these fresh exotic fruits will transport your tastebuds to a tropical island.

Ingredients

For the salmon

Salmon fillets (depending on how many you make, 4-6 will be fine)

3-4 tbsp olive oil

2-3 Tbsp of fresh lime juice

1-2 tsp of lime zest

2-3 cloves of crushed garlic

Salt and black pepper, to taste

2 medium mangoes (peeled and dice)

2 medium avocados  (peeled and diced)

1 medium red bell pepper (chopped)

1/3 of  red onion, (chopped and rinsed under cold water)

1/4 cup chopped fresh cilantro

1 Tbsp fresh lime juice

1 Tbsp olive oil

Salt and fresh ground pepper, to taste

Instructions

The salmon marinade

In small bowl, whisk the olive oil, lime zest, lime juice, garlic, salt and pepper together (set aside).

Place the salmon in a baking dish and pour the marinate over the salmon.

Make sure that the marinade cover both sides of the salmon.

Cover with a plastic film, let it marinate in the fridge for at least 30 min or overnight.

Grilling or baking the salmon

Grilling

Preheat a grill or griddler  over medium-high heat.

If you don’t have any of the above, a grilling pan will work as well.

Make sure that you oil your grill or pan prior to cooking.

Gently place the salmon fillet on the grill and cook for about 5 min.

Carefully turn the salmon and cook for another 5 min  or until it is cooked through!

Tip: If you preferred your salmon fillet with skin on, place the fillet in the baking dish skin down first!

Baking

Preheat your oven at 400F.

Marinate the salmon and place in a baking dish. (See steps above)

Bake the salmon for 10-15 min.

Mango Avocado Salsa

In a large bowl, mix mango, avocado, bell pepper, red onion, cilantro, lime juice, olive oil together.

Season with salt and fresh ground pepper!

Plating

Place the salmon on a plate.

Drizzle the mango avocado salsa across the salmon.

Serve with rice or a side of your choice.

I served mine with rice and sweet fried plantains!
